Pumpkin Soup
Easier than carving a Jack O Lantern – making a soup with your pumpkin. You willl need to preheat your oven to 400 degrees and 1 medium size pumpkin, 1 clove of garlic, 1 leek, sliced, 1 cup shredded parmessan cheese, fresh sage and rosemary finely chopped, 1 carton/32 oz of chicken or vegetable stockCreating your Pumpkin
Creating your Pumpkin Soup
Add the above ingredients to the inside of the pumpkin. I added a couple of dashes of nutmeg. Replace the lid. Place your pumpkin on a sided cookie sheet in the oven and bake for 2 hours. Remove pumpkin, and as you scoop out your soup, scoop out some pumpkin 'meat'. Sprinkle some parmessan cheese and croutons on top, enjoy.

This summer I had a very nice garden, thanks to a very smelly compost that was added to the soil. Five large pumpkins were grown and of course my grandson was the owner of two.
